I love pasta salad. This recipe has been a favorite of mine since I married into my husband’s family. My brother-in-law created this recipe for Treebeards when he was employed there several years ago. Whenever I sign up to bring a side dish at a family or church function, this is always a hit!
Ingredients
- 1 tablespoon olive oil
- 8 ounces tri-colored pasta
- 1/2 pint cherry tomatoes
- 1/2 yellow bell pepper
- 1/4 green bell pepper
- 1/2 small red onion
- 3/4 cup shredded Monterey Jack Cheese
- 2 tablespoons chopped fresh Cilantro
Instructions
- In large pot, bring 3 quarts water to a boil; add olive oil and pasta. Reduce heat and cook, stirring occasionally until pasta is tender yet firm to the bite. Drain. Rinse under cold running water. Refrigerate.
- Meanwhile, cut cherry tomatoes in half. Cut peppers into julienne strips and thinly slice red onion. Add vegetables and cilantro to cooled pasta.
Notes
I use Newman's Own Balsamic Vinaigrette dressing on this salad. I do not put the dressing or the cheese on until I am ready to serve it. You can also use your own homemade dressing.
The thing that makes this salad stand out from just a regular pasta salad is the Cilantro. It adds a little bit of zing to your taste buds. I just can’t get enough of it.
Go ahead. Make up a batch. I double the recipe. It makes a great “take-n-go” lunch.
