Pasta Salad With Zing!

I love pasta salad.  This recipe has been a favorite of mine since I married into my husband’s family.  My brother-in-law created this recipe for Treebeards when he was employed there several years ago.  Whenever I sign up to bring a side dish at a family or church function, this is always a hit!

Pasta Salad With Zing!

Ingredients

  • 1 tablespoon olive oil
  • 8 ounces tri-colored pasta
  • 1/2 pint cherry tomatoes
  • 1/2 yellow bell pepper
  • 1/4 green bell pepper
  • 1/2 small red onion
  • 3/4 cup shredded Monterey Jack Cheese
  • 2 tablespoons chopped fresh Cilantro

Instructions

  1. In large pot, bring 3 quarts water to a boil; add olive oil and pasta. Reduce heat and cook, stirring occasionally until pasta is tender yet firm to the bite. Drain. Rinse under cold running water. Refrigerate.
  2. Meanwhile, cut cherry tomatoes in half. Cut peppers into julienne strips and thinly slice red onion. Add vegetables and cilantro to cooled pasta.

Notes

I use Newman's Own Balsamic Vinaigrette dressing on this salad. I do not put the dressing or the cheese on until I am ready to serve it. You can also use your own homemade dressing.

The thing that makes this salad stand out from just a regular pasta salad is the Cilantro.  It adds a little bit of zing to your taste buds.  I just can’t get enough of it.

Go ahead.  Make up a batch. I double the recipe.  It makes a great “take-n-go” lunch.
